roasted veggies pasta

  • 2 zucchinis, diced
  • 2 eggplants, diced
  • 1 onion, diced
  • 20 cherry tomatoes
  • ¼ cup olive oil
  • 4 cloves garlic, minced
  • 10 sun dried tomatoes, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon dried Italian herb seasoning
  • ¼ teaspoon dried thyme
  • ¼ teaspoon dried basil
  • 1 ¼ teaspoon salt
  • ¼ teaspoon fresh ground pepper
  • fresh basil, chopped
  • fresh parsley, chopped
  • Parmesan cheese

1. Mix all veggies.

2. Mix together olive oil, minced garlic, sun-dried tomatoes, tomato paste, 1 tablespoon minced onion, dried herbs, salt, and pepper and mix with veggies (coat well).

3. Roast for 45 minutes in 180C.

4. Serve with pasta, fresh herbs and grated Parmesan cheese.

mango quinoa salad

Salad:

  • 500g of fried shrimps (thaw shrimps on a pan if frozen; add some butter and fry for few minutes, wait until cold)
  • 1 cup of quinoa (cook in 2 cups of water for 15 minutes)
  • 2 mangoes, diced (or pears or peaches)
  • 2 avocados, diced
  • 4 corn cobs (cook in salted water for approximately 15 minutes)
  • 10-15 diced cherry tomatoes
  • 1 chilli, seeded and diced
  • large handful of chopped fresh coriander

for dressing mix:

  • juice from 2 limes
  • 1 tsp lime zest
  • 2 Tbs extra virgin olive oil
  • 1 tsp ground chili powder

Mix all the ingredients for the salad and add dressing.
